1lbbonelessskinless chicken breasts, cut into 2-inch pieces
1large red bell pepperseeded and cut into 1 ½-inch cubes
1large red onioncut into 1 ½-inch cubes

To serve: crumbled feta cheese
Instructions
To a large bowl, add all the marinade ingredients and mix well to combine.
Add the pieces of chicken and toss to get evenly coated. Marinate into the fridge for up to 1 hour.
To assemble the skweres, thread a piece of chicken, followed by a piece of pepper and onion. Repeat with the rest of the ingredients; you should get around 8 skewers.
Meanwhile, heat a grill pan or the outside grill to medium-high heat.
Grill the skewers for 6-8 minutes in total, or until the chicken is fully cooked through.
Serve them with crumbled feta cheese and enjoy!
Notes
Use chicken breast. You may use boneless chicken thighs but we much prefer using chicken breast.
Red peppers can be substituted with any of the bell pepper. Yellow, green, or orange will work.
Onion: we used red/purple onion, if you can't find any just use any onion.
Do not overcook the chicken so it doesn't dry out and get rubbery.
Any yogurt would work as well instead of Greek yogurt.
Soak the wooden skewers for a good 15-20 minutes to preventing them from burning.
Green olive tapenade could be an optional ingredient but adds a great taste.
Store leftovers in an airtight container in the fridge for up to 3 days
You can prepare this ahead. Marinate the chicken a day before.
