Oatmeal Bars
Oatmeal granola bars made with a variety of nuts and fruits and takes just 30 minutes to make.

- 1 cup rolled oats
- 1/3 cup raw honey
- 1/4 cup pistachios roughly chopped
- 2 tbsp coconut oil melted
- 1 tbsp sunflower seeds
- 1 tbsp pumpkin seeds
- 1/4 cup golden raisins
- 1/4 cup dried cranberries
- 1/4 cup pitted Medjool dates roughly chopped
Preheat the oven to 325F and line a square 8x8 cake tin with parchment paper.
In a mixing bowl add all the ingredients and mix thoroughly to combine. The mixture should be a bit wet and hold together when pinched.
Transfer the oat mixture to your prepared cake tin and press into an even layer.
Bake at 325F for 20 mins, then allow it to cool completely before cutting into squares.
Store in an airtight container for up to 3 days.
- Honey: you may replace the honey with maple syrup for a vegan-friendly option.
- Oats: we recommend using rolled oats, not quick oats or steel-cut oats.
- Fruits and nuts: use your favorite fruits and nuts to make this oatmeal granola recipe. You can get as creative as you like.
- Allow the baked granola bars to cool off completely before cutting them up.
- Storing: Place the cooled granola bars in a tightly sealed container before storing them in the fridge for up to 3-4 days
