Sriracha Chicken Broccoli Skillet

Ingredients

  • 1 lb Chicken Breast skinless, boneless, cut into bite sizes
  • 1 Tbsp Sriracha Seasoning Blend I used the Fit Cook Brand
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  • Place the chicken in a bowl and add the olive oil and seasonings along with salt and pepper. Mix and set aside while you cut and cook the broccoli.
  • Cook broccoli for about 2 minutes. Remove the broccoli from boiling water and place it into a cool water bath to prevent them from continuing to cook.
  • In a non-stick skillet, add the chicken and cook for about 4-6 minutes over medium heat until cooked throughout. Mix occasionally.
  • Place the broccoli over the chicken. Lower the heat and allow it to simmer for another 3-4 minutes. Serve and enjoy.

Notes

  • Make sure to use a large skillet, or you can use a wok.
  • Don't overcook the broccoli! You want some bite in your broccoli, only a couple of minutes are needed.
  • Use an ice bath on the broccoli after boiling it, to avoid it continuing to cook.
  • You can also use boneless skinless chicken thighs.
  • This recipe can easily be doubled to serve more, or for meal prep.
  • For a different flavor, you could use shrimp or even thinly sliced flank steak, in place of the chicken.
  • You can add other veggies to this dish, mushrooms would work great. You might want to sautee them first and add them back in with the broccoli after the chicken is cooked through.
  • For an even spicier kick, add in some crushed chili flakes.
  • Top with some fresh parsley for a pop of freshness.
