Ingredients

  • ¾ Cup Old-fashioned oats
  • ¼ Cup Walnuts roughly chopped
  • 1 Tsp Ground Cinnamon
  • 3 Tbsp Maple Syrup
  • Tbsp Coconut Oil

For the filling

  • 6 Cups Small-diced Apples of choice
  • 2 Tbsp Cornstarch
  • Tsp Ground Cinnamon
  • Tsp Ground Nutmeg

Instructions

  • Preheat the oven to 350°F, and coat a 2 quarts casserole dish with nonstick cooking spray.
  • In a mixing bowl combine together the oats, walnuts, cinnamon, maple syrup, and coconut oil. Using your fingers stir until crumbly.
  • In another bowl, toss the apples with the cornstarch, cinnamon, and nutmeg, until evenly coated.
  • Transfer the filling to the prepared dish, and gently press down with a spatula. Sprinkle evenly with the oatmeal topping.
  • Bake at 350°F for 25-35 minutes or until the apples are tender and tops are crisp. Enjoy!
