Easy Papaya Fruit Breakfast Boats

Fruit and yogurt parfaits served inside of papaya.

Ingredients

  • 2 small papayas halved lengthwise and seeded
  • 2 cups of vanilla or plain Greek yogurt
  • 1/2 cup granola look for a low-fat, low sugar variety
  • 1/4 cup sliced almonds
  • 1/4 cup chia seeds
  • 1/2 cup fruit such as cherries raspberries, sliced kiwis, diced pineapple

Instructions

  • Spoon 1/2 cup of Greek yogurt into each papaya half. 
  • Top each papaya half with 2 tablespoons granola, 1 tablespoon each of sliced almonds and chia seeds, and 2 tablespoons of fruit.
  • Serve immediately

Notes

  • Add your favorite fruits!
  • Cut your papaya lengthwise and make sure to deseed it.
  • Keep simple with some Greek yogurt or load it all up with goodies, whatever you like.
  • Drizzle on some agave syrup for a little kick of sweetness.
  • Assemble your papaya breakfast boats just before serving.  If you like, you can prep your fruit earlier, if you like, and keep under damp paper towel in the refrigerator
  • You can also use ripe melons for the boat, if you can't get hold of a papaya.
  • For an extra tropical twist, add some coconut shavings
