1/2cupgranolalook for a low-fat, low sugar variety
1/4cupsliced almonds
1/4cupchia seeds
1/2cupfruit such as cherriesraspberries, sliced kiwis, diced pineapple
Instructions
Spoon 1/2 cup of Greek yogurt into each papaya half.
Top each papaya half with 2 tablespoons granola, 1 tablespoon each of sliced almonds and chia seeds, and 2 tablespoons of fruit.
Serve immediately
Notes
Add your favorite fruits!
Cut your papaya lengthwise and make sure to deseed it.
Keep simple with some Greek yogurt or load it all up with goodies, whatever you like.
Drizzle on some agave syrup for a little kick of sweetness.
Assemble your papaya breakfast boats just before serving. If you like, you can prep your fruit earlier, if you like, and keep under damp paper towel in the refrigerator
You can also use ripe melons for the boat, if you can't get hold of a papaya.
For an extra tropical twist, add some coconut shavings
