Easy Chicken Cacciatore

Chicken simmered in a flavorful tomato sauce with vegetables and olives, perfect served over zucchini noodles!

Ingredients

  • 1 pound chicken tenders or thin cut chicken breasts
  • salt and pepper to taste
  • 1 tablespoon olive oil divided use
  • 2 teaspoons minced garlic
  • 1 green bell pepper cored, seeded and diced
  • 1 ½ cups mushrooms sliced
  • 1/3 cup kalamata olives halved
  • 1 ½ cups marinara sauce
  • 2 tablespoons parsley chopped

Instructions

  1. Heat 1 teaspoon of the olive oil in a large pan over medium heat. Add the green bell pepper and mushrooms to the pan and cook for 4-5 minutes or until softened.
  2. Add the garlic and cook for an additional 30 seconds.
  3. Remove the vegetables from the pan; place on a plate and cover to keep warm.
  4. Add the remaining 2 teaspoons of olive oil to the pan.
  5. Season the chicken with salt and pepper to taste and place in the pan. Cook for 5-6 minutes per side or until browned and cooked through.
  6. Add the vegetables back to the pan, along with the marinara sauce and olive.
  7. Simmer for 5 minutes or until sauce is heated through.
  8. Sprinkle with parsley and serve.
