Brown Butter Gingerbread Madeleines
Ingredients
- 1/4 Cup Butter
- 2 1/2 Tbsp Blackstrap Molasses
- 1/3 Cup Gluten-free baking flour
- 2 Tbsp Tapioca Flour
- 1 Tsp Cinnamon
- 1/2 Tsp Ground Cloves
- 1/2 Tsp Ground Ginger
- 1 Egg large
- 1/3 Cup Granulated Erythritol
- 1/4 Tsp Baking Powder
Instructions
- Preheat the oven to 350 F and prepare a standard madeleine pan with non-stick spray.
- In a small saucepan, melt the butter over medium heat. Continue cooking the butter until small brown speckles start to form. Remove from heat and stir in molasses.
- In another bowl, whisk together the egg and granulated erythritol until well combined.
- Add in the gluten-free baking flour, tapioca flour, spices, and baking powder and stir until no dry spots remain.
- Finally, stir in the brown butter mixture until batter forms. Fill each mold with batter and bake the cookies for 14-16 minutes.
- Let cool. Dust with powdered erythritol if desired.

If you aren't Gluten sensitive you could use Oat or whole wheat flour to make these Healthy Brown Butter Gingerbread Madeleines. As for the blackstrap Molasses, you can replace it with either honey or maple syrup.
- Ideally use the appropriate, shell-shaped baking pans for this recipe. They really add a beautiful look to this little and delicious cake.
- Cut your butter into pieces before browning it. This makes sure it cooks evenly.
- When browning the butter, keep stirring, this stops the butter from burning and also helps to cook it evenly.
- Use a light colored pan when browning butter, then you spot exactly when the butter has browned
- Make sure your eggs are at room temperature. Room temperature ingredients mix more thoroughly into the batter.
- Don't forget to prep you cake tin! A generous coating of butter or non stick spray means the madeleines come out more easily.
- For an extra decadent touch, dip the Gluten Free Madeleines in some melted gluten free chocolate!
- Allow to cool before dusting.
