This Easy Beef Burrito Meal Prep bowl recipe is made with lean ground beef, brown rice, sweet corn, and black beans and then topped with a delicious Avocado Cream sauce. Perfect meal prep meal.

It is the perfect recipe to use for meal prep. Just save the avocado cream sauce in a small container separately before you store it and use it when ready to have your beef burritos. This healthy ground beef and bean burrito recipe is so easy to make and so tasty. Also, try to make your own pico de gallo if possible or you can use store bought if you have a favorite kind you typically use.

Ingredients for burrito bowl

  • Brown Rice: or 2 cups pre-cooked. You may use white rice or quinoa * see notes
  • Olive Oil: or avocado oil
  • Ground Beef: use very leave ground beef. 90% if possible
  • Seasonings: Chili Powder, Ground Cumin, Oregano, Onion Powder, Smoked Paprika, salt and freshly ground black pepper
  • Garlic Cloves: use fresh garlic cloves
  • Black Beans, drained and rinsed ( 1 Can ), or use pinto beans
  • Canned Corn or use freshly cooked corn
  • Pico de gallo or use homemade
  • Fresh Parsley to Garnish

  • Plain Nonfat Greek Yogurt: plain yogurt or sour cream will work too
  • Chipotle pepper in adobo sauce, minced
  • Ripe Avocado
  • Freshly squeezed lime juice

How to make beef burrito

  • In a small bowl whisk all sauce ingredients until well combined; set aside.
  • Cook rice according to package directions if you aren’t using pre-cooked brown rice. Set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add ground beef, garlic, and seasonings; Sprinkle with salt and pepper, to taste.
  • Cook for about 3-5 minutes, stirring with a wooden spoon to break the meat as it cooks.
  • To assemble the bowls divide the rice and beef mixture among 4 glass containers. Top with black beans, corn and pico de gallo, then drizzle with avocado cream sauce.
  • Refrigerate for up to 5 days. Enjoy!

Recipe notes and tips

  • Instead of the brown rice, you may use cooked quinoa, plain white rice, cauliflower rice for a lower carb option, or cilantro lime rice.
  • If you do not want to serve it with the avocado cream sauce that is fine. Swap with a little bit of sour cream or shredded cheese.
  • Don’t want to use beef? use lean ground chicken or ground turkey breast.
  • If you can use roasted corn kernels even better!
  • Instead of pico de Gallo, use chopped cherry tomatoes.
  • You may use refried beans, but for a healthier option, use plain black beans.

Storage recommendations

  • Storing: Store the leftover burrito bowl in a sealed container in the fridge for up to 5 days. You may also freeze for up to 3 months.
  • Reheating: Reheat in the microwave for 60-90 seconds until it is heated through.

What to serve with beef and rice burrito

  • Try to have your beef burrito with tortilla chips. Corn tortillas will be great.
  • Add some shredded cheese
  • Serve with some shredded lettuce.
  • If you love sour cream then serve with some sour cream
  • Top with some chili pepper flakes or sliced jalapenos

Ingredients

  • 1 Cup Brown Rice, or 2 cups pre-cooked
  • 1 Tbsp Olive Oil
  • 1 ½ lb Lean Ground Beef
  • ½ tsp Chili Powder
  • ½ tsp Ground Cumin
  • ½ Tsp Oregano
  • ¼ tsp Onion Powder
  • ¼ tsp Smoked Paprika
  • 2 Garlic Cloves, minced
  • Sea salt and freshly ground black pepper , to taste
  • 15 oz Black Beans, drained and rinsed, ( 1 Can )
  • 15 oz Canned Corn , or use freshly cooked corn
  • ½ Cup Pico de gallo, or use homemade
  • Fresh Parsley to Garnish

Avocado Cream Sauce

  • ½ Cup Plain Nonfat Greek Yogurt
  • 1 Chipotle pepper in adobo sauce, minced
