1 Small Sweet Potato (or 1/2 medium) shredded
1/4 Cup Red Bell Pepper (cut small)
2 Eggs (you can remove one yolk if on a strict diet)
Salt and Pepper
1 TB Olive oil (or use the spray version)
Green onions (for garnishing)
Place shredded sweet potato and red pepper with olive oil in a pan. Sprinkle some salt and garlic powder. let it fry/simmer for a couple of minutes and cover it for another minute or two so the potato cooks on medium-low heat. Add eggs and cover again for another minute (covering after adding the eggs will help cook the eggs faster and better). Sprinkle salt and pepper. Garnish with onions.
