Chocolate Chip Banana Bread

3/4 Cup Oat Flour
3/4 Cup Whole Wheat Flour
3 Ripe Bananas (mashed about 1 Cup)
1 large Egg
1/4 Cup Coconut Oil (melt in microwave for 10-15 seconds if needed)
1 Tsp Vanilla
1/4ย  Cup Brown Sugar or Honey (can use sweetener of choice)
1 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Cinnamon
1/4 Tsp Salt
1/4 Dark Chocolate Chips (optional)
Cooking spray
Topping: rolled oats and dark Chocolate Chips


1) Preheat oven at 350 F.ย  Then place all dry ingredients in a large bowl. These are flour, baking soda, baking powder, salt and cinnamon. Leave the sugar or honey for wet ingredients.

2) In a separate bowl mix wet Ingredients. These areย  sugar/honey, mashed bananas, egg, oil and vanilla.

3) Pour wet ingredients over dry ingredients and mix well.

4) Place batter in a greased pan and top with chocolate chip and rolled Oats if using. Bake for about 35-45 minutes or until a toothpick comes out dry.

    Does it matter what kind if flour you use?

      Hi Jenna
      I have made this with many different kinds of flour so no it doesn’t matter. I have used white flour, spelt flour and whole wheat.

      Hi Elisa
      The Oil makes is moist. another substitute would be 1/4 cup apple sauce but I cant say for sure I have never tried it. If you don’t have coconut oil any other healthy oil would work or light butter. I hope it helps

    Hi, I tried this but my batter was not liquidy, it was dry kinda looked like the consistency of cookie dough batter, what is the batter consistency have to look like? Is there anything I can add to make it less dry? I added everything that the recipe called for. Instead of oat flour, I used coconut flour & wheat flour.

      Whats Happening? I hope you figured it out. Coconut flour is so tricky to use. it always needs more eggs and liquid because of its absorbency. I haven’t mastered baking with it yet. I would have assumed your problem to be solved by just adding some water or almond milk. let me know what you did.

          I cannot say for sure since I have never tried it. I have seen many vegans use it in baking so I am assuming that it should work. If you try it let me know I would love to find out how it comes out.
