Cauliflower Crust Pizza

INGREDIENTS

1 whole cauliflower head cut into florets
2 eggs
1/4 cup grated parmesan cheese
1 tsp onion powder
1 tsp paprika
Toppings: pizza sauce, shredded mozzarella cheese, sliced tomatoes, sundried tomatoes & fresh basil

 

DIRECTIONS

1)  Use a food processor to finely chop cauliflower florets

2) Transfer to a microwave-safe bowl and cook for five minutes so the cauliflower softens; allow a few minutes to cool

3) Place cauliflower in a towel, and squeeze out all the excess water so it is as dry as possible.

4) Transfer to a bowl and mix in the eggs, grated parmesan, onion powder and paprika. Spread into desired shape on parchment-lined baking sheet and bake in preheated oven at 400F for 40 minutes.

5) Add toppings and bake at 450F for about 8 minutes until toppings look cooked

      Thank you. A friend of mine made this. I am not sure exactly the amount of ingredients she used for he toppings and thus I am unable to calculate it. I could roughly give you an idea of you like.

    Hey! I don’t have a food processor so I was wondering what else I can use. Also, how much do you break down the cauliflower so it can turn into a pizza crust?

      Hi Ashley
      I asked my friend feelgoodfoodie and she said you can use a shredder instead. She also said youtube has some great tutorial on this. Let me know if you figure it out. I have yet to try this myself. its on my to do list!

    Hi Rena, the recipe says the serving size is 4 but I’m curious what exactly that means. I want to make this pizza tonight for me and my boyfriend and not sure if 1 pizza will be big enough to fill us both or if I should make two. We’re both fitness fanatics with specific portions and macros to meet so I want to make sure I do it right. Thanks!
