Cajun Shrimp Quinoa

INGREDIENTS:

Quinoa:
1 Cup Cooked Quinoa
1/4 of each Red, Green and Yellow Peppers (cut into cubes)
1 Tb Olive Oil
2 Garlic Cloves (minced)
Dash of Sea Salt and Pepper
Shrimp:
8-10 Jumbo Shrimp
Cajun Spice
1 Tb Olive Oil
Salt and Pepper
Dash of Zesty Spice (use your favorite spices)

DIRECTIONS

Mix the spices with shrimp and olive oil and pan grill it. (Cook any way you like. Sautéed will work too). While shrimp is cooking, in another pan prepare the Quinoa. Sauté Peppers with garlic, olive oil, salt and pepper for a few minutes. Add cooked quinoa, mix and set aside.
Then serve the shrimps over your cooked quinoa mixture. You can spice it up more if you like with cayenne pepper. Simply delicious!
